There is currently no provision for setting the “From” address from the form, as the (default From) address is added, when the Crontab job executes. You might consider having each person filling out the “Signature” section of the email, as appropriate.
Per the video, related to this subject; there is a difference between fields that appear on the registration form, and fields that appear on the profile form. Are you sure that your expectations match which forms the fields are associated with?
The points you have made are intrinsic limitations of the CSV file format; and we have no control over the limitations of the standard.
It would be helpful if the software either accepted the commas, or produced an error message for records with commas. If I didn’t double check the count of records imported vs. what I expected, I would have never noticed that some records did not import.
CSV = Comma Separated Values. We have no control over the limitations inherent to the CSV standard.
What was the solution?

Please be more specific, about your particular case. You are using a WordPress.com site? Your database has mixed UTF-8 / Latin-1 encoding? Or you are just plain having problems with CSV importing?
When you are “logged into” eMember, there should be a browser cookie named: emember_in_use
If your game is doing anything that tampers with, refuses, or deletes that cookie; you are logged out.

Have you tried placing the shortcodes within a table?

Are you receiving seller emails, as expected?
Are you using any page caching plugins?
Are there any other circumstances in which the time/date is off from your time zone?
Please download and install the latest version of the plugin; then empty the cache of the browser and try again. Let us know if you still see the issue after that.
