I think I actually figured this out! If anyone’s interested, I installed the Extra Shortcodes for WP eStore plugin.

I placed this shortcode within my page:

[wp_eStore_display_compact_cart show_empty=0 show_sub_total=0 show_title=1 show_cart_image=0]

Then, inside that folder, I edited line #491 inside shortcode_include.php to read:

$output .= eStore_cart_display_items_part($currency_symbol,$decimal);

It allows me to show the cart when someone adds a service, but doesn’t let them check out prematurely.

Still, it would be great if we had our own shortcode for doing this.
