I have just purchased the Payment Gateway Bundle and have configured the Stripe gateway. My aim is to allow a subscription payment to be made using either PayPal or Stripe, however when I click the Subscribe button it takes me straight to PayPal.
How can I tell the system to display BOTH PayPal and Stripe subscription options?

Subscription buttons, by default, use PayPal. You need to use “gateway specific” subscription buttons (see step 3):
Ok, thanks for that. When I use that shortcode, how do I customize the Subscribe button though?
There are two different shortcodes:
1) For creating a PayPal subscription
2) For creating a stripe subscription
Put both those shortcodes on the page and your customers can select which one they want to use to pay you.
You can also create 2 different eStore products for them also (one for PayPal and one for stripe). You can then use the following option to use a custom button image (that says whatever you want the button to say):

You must first be using the Payment Gateway Bundle Addon for eStore:

After which, you can setup a Stripe specific subscription button:
