I transfered from a godaddy shared to a dedicated due to the fact that the large encrypted files time out. S-3 is way to expensive of an alternative.
Anyway – I cloned the site and set it up through using the IP and once everything was setup, I changed the name servers over.
Now everything works great EXCEPT:
Paypal send the customer to [http://IP address/thank-you/] – yes the download works fine, however, in the future I am worried that I will need to revisit this improper setting issue.
When I type into the paypal gateway settings and correct to the proper domain name and press enter or update… it reverts back to the Ip address and not the domain.
1: Are there other setting to correct this am I not in the correct area to specify the proper domain name?
2: Should I uninstall the whole plugin and re-setup my shopping carts?

That usually means that the “Return URL” field value is wrong. Can you go to the settings menu of eStore and update that field’s value to a URL?
I would also recommend you to load a fresh copy of the eStore plugin:
