I have saved the files as jpgs between 6 and 9 mb in size and uploaded them using the WP Photo Selling plugin via the media upload page. When the images are shown in a gallery the colors are WAY off.

Way off compared to what?
Can you upload the exact same photo on a test page which isn’t using the photo seller and post the link so we can see a direct comparison?
The photo seller plugin does not manipulate photo colours as far as I am aware.
