We are using Estore to register people for classes at our store,
I add a class that was meeting twice a day once at 1:00PM and again at 5:30PM.
I added the following variation:
Start Date/Time:|08/12/2010 1:00PM|08/12/2010 5:30PM
However the display on the drop down is as follows:
08/12/2010 1 [ +$00PM and 08/12/2010 5 [ +$30PM
See:

The problem here is when you are using “:” WP eStore is trying to take the argument next to it as a price variation. That’s why it’s enclosing the text next to “:” with “[ ]”. If you use any other symbol for showing time it will be fixed.
for example –
Start Date/Time|08/12/2010 1.00PM|08/12/2010 5.30PM
