Using UK postal addresses

Hi I am building a shop in the UK with a manual checkout. I would like to change the manual payment gateway form so it is more UK user friendly by changing the ‘city’ to ‘town’ and ‘state’ to ‘county’.

I had a go at altering the manual gateway functions file unsuccessfully and quickly reverted to the original code. Could you point me to the code I need to alter so that the form reads town and county rather than city and state? Also at the top of the form it says ‘hit Confirm Order’ I would rather it say ‘click Confirm Order’ where can I alter this please.
