I noticed that the stats total for a product equals #sales X $full price. It doesn’t seem to adjust for the coupons that have been applied.
Is this correct, or have I failed to set something up correctly?

The total amount shown in stat does take into account any discounted price for an item. Remember that quantity of each item also plays a role in the calculation which you are missing from your equation. There is an easy test you can do to verify what I am saying. Go to your PayPal account and sum up the total money you received from products sales in the last 14 days. Now, go to eStore stats and set the date range to the last 14 days. You will see that the total amount will be the same (allow for a little discrepancy for the time difference between PayPal’s server and your server).
