Is it possible to protect the title as well as content? In other words when someone clicks on a category they will be blocked from the post title, as well as the content, unless logged in.

Nope. You can however use the “Site Wide Protection” feature to make it so only logged in members can access your site.
I have a lot of the site free but I did find a Widgets To Pages plugin so I should be able to use WP-dTree in a page and protect that page. At least that’s my plan:)
