I can fill out the Add New Product form, click Save Product, and nothing happens. No product is added to the database. I can do normal WP processes like Posts, and add eStore Product categories, but no actual Products.
Did you recently do an upgrade of the eStore plugin and forgot to do the deactivate and reactivate? The upgrade instruction can be found here:

No, I’m using Version v3.9.4 which was installed ages ago. My client is finally getting around to using her blog and hasn’t been able to add anything. The plugin says a product has been added, but when you go to Manage Products, it was never added. The MySQL database wasn’t updated. Are there new releases? Or, do I have to buy them?

Please update the plugins and see if this issue is still happening. Make sure to deactivate and reactivate the plugins after you update them.
