PDF Stamper – add on to include custom message?

Is there an add on or some coding you know of which will work with PDF stamper to allow the purchaser to add a custom message to the PDF being stamped? THis is to create a Gift Voucher with a message.

There is an option in the security settings to “Allow Modify – The user with full acrobat product range is allowed to modify the contents of the stamped file.” I think this is what you are looking for.
