Hello
I sell info products in eBook form with links to streaming video on my site.
I’ve been using a plugin called “WP-Members” and it allows me to create products that include locked/for members only content. So, students can buy “X course” and get access to the pages associated with that course.
I assume that I’ll simply treat “Membership Level” in WP eMembers as products?
So instead of Gold Member, Silver Member…, I’d create a “X course”, “Y Course”…?

Forgot to mention that I’m also using WP eStore. Not sure how to integrate the two re info products with eBooks, members… Thanks.
Yes, you can make estore products for your membership levels. The following documentation has details:

I’m confused about buttons for my products.
* I have 8 (pdf download) products and need customers to be able to purchase any combination of them.
* I have multiple memberships turned on in WP eMembers, and have associated membership id’s with products in WP eStore.
Should I use the eStore add to cart/Buy now, or eMember add to cart/buy now?
Also, I’m using PDF Stamper and that plugin has “Direct PayPal Button Integration” settings. So, is that the button I should be using?
The only payment gateway I’m using is Paypal.

Many of my sales are one-off, not recurring customers. Do I need to use “Redirection URL for Anonymous Checkout”?
Or is new “member” info populated when any purchase is made?
You should be using eStore’s buttons. eStore’s buttons will work with BOTH the stamper and the membership access.
I have sent you an email also so I can look at your stamper plugin’s configuration.
