It seems to me the category description is limited to about 250 characters in length. Is there any way to extend this?

Yeah you can easily change this. It’s better if I do this change in the plugin so in the future when you update the plugin you won’t have to manually do the change again.
I have sent you an updated version of the plugin that should not limit you to 255 characters for the description field for a category. Let me know how it goes.
