Firstly, Thanks for this great tool. This is the issue:
WP eStore can’t manage the correct “Available Copies” of my products, For instance if I have available just one watch model but any custmer can add more than one products in the shopping cart of this model.
What can I do? This is a very important control to have.

The way eStore works is that it takes the item out from the inventory when you actually make a payment for that item. So as soon as someone hits the “Pay Now” button and the payment is confirmed this will happen.
Just because someone added an item to the cart doesn’t mean he is actually going to purchase it so you don’t want to limit your other real customer from buying the item (remember lot of your customer will add items to the cart and not actually follow through on the payment).
Yes, That makes sense. So if I defined just one item in my inventory, at the moment of checkout, it will show just one available to buy, doesn’t it? even customers added more than one, right?
I asked this because when you go through the checkout process to paypal it shows an invoice to be paid with the amount of selected items (and it can be above the available inventory).

FYI… If only one item is available for sale and another shopper has the item in the cart, you could show a sign to all other shoppers informing them that the item is in a persons shopping cart. I have seen this in some shopping carts appears to address the issue in a clear manner
