Instant Payment Notification to Separate Emails

I would like a couple of other people to receive an IPN when a donation is made to a non-profit

Is it possible to do that and if so, where should the other emails be added in wp-estore?

By “IPN” do you mean a the notification email that eStore sends or do you actually mean the IPN data that PayPal sends after a payment?

If you mean the notification email then go to eStore settings and enter the email addresses in the “Notification Email Address” field separated by comma. That will make eStore send the notification email to all of those email addresses.
