I’d love it so that when affiliates signed up, it would add them to a specific MailChimp list, (and perhaps allow MailChimp to send the welcome email as well?)

I have added the autoresponder signup option for the WP Affiliate Platform plugin. If you do not see “Autoresponder Settings” tab under the “WP Affiliate Platform” settings menu please get a new build of the plugin from here:
