If user has any input text, it is added to product name in shopping cart. How do I remove it from shopping cart, but still want to be able to see it in receipt or order form?
You can’t remove the custom input from the product name (this is how the plugin keeps track of who entered what text for which product).
However, you don’t have to use the eStore’s customer input option. This post has more info:

Regarding the field: “Collect Customer input”
If a customer fills in a text of lets say 30 characters, then this will cause the
price to get out of the shopping cart window, because it is too narrow.
So it would be great if it was possible to
disable the display of this field in the shopping cart.
Is it the “customer_input_label” ?
30 characters won’t push the price out of the shopping cart if you are placing the shopping cart on a normal WordPress page. If you are expecting big input from customers simply use the shopping cart on a “Checkout” page. Don’t show the full cart on the sidebar (You can use a compact cart on the sidebar).
