How do you create subcategory / child galleries in WP Photo Seller?
For instance:
Birds > Shore Birds > Pelicans

Currently that sub-categorising thing which you mention is not possible, but we are planning on adding such a capability in an update soon.
At the moment the closest thing to achieve what you want to do is to use the album feature.
For example you could create an album called “Birds” and then create galleries called “Pelicans”, “Water Fowl”, “Birds of Prey” etc – and then link these galleries to the album called “Birds”.
I appreciate the response. That is what I was hoping for but then realized there are some folders that will be even deeper. What about your eStore plugin? Would that allow for an unlimited amount of category layers?

eStore operates in a totally different way and is totally independent of the photo seller plugin so you cannot use both of them together.
Any update on making this feature available?

Currently such a feature has not been implemented yet.
Having said that, have you tried the album feature which appears to have the functionality you desire?
Yes, I have set up the album feature, and I can add sub galleries to that. However having a solution that only allows one level of gallery/folder depth seems a little short sighted in an otherwise incredible solution.
I would be willing to pay for custom work to get this done if that is what is needed. I am currently using the old stale Gallery3 project for my photos, and I can arrange my photos in directories, and sub directories, and use the server import tool (similar to the bulk import) and it will dump the pictures into a gallery, and put sub folders into sub galleries. It is an all in one, simple process… It takes me 4 times as long using the album/gallery concept, and can only go 1 level deep.
