Is there a list somewhere of the optimal sizes for the various images? (Thumbnails, product images, etc.)
No, because there is no restriction on the image size/dimension. Most fancy displays use a square thumbnail so if your images are square (doesn’t matter how big or small) then they will look better. So its a matter of finding out which fancy display you will be using then observe the image shape it uses (square or rectangular) and make your images in that shape if possible. In most cases using the “smart thumbnail option” will automatically take a correct snapshot of the image so it doesn’t look squished.
