Have eStore running for our summer camps here:

Need to limit camp inventory to 12 kids per camp week, but each camp has the user options of choosing:
1- Camp Week
2- Price
What would be the best way to handle inventory controls so after 12 slots are sold per camp week the inventory goes to 0?
Do I need to create a new product for each camp week? That would reduce the variables done to the “Select a Price” only.
Could I control inventory for a camp product if it has a choose your price variable?
