eStore – Make a custom Manual Payment form

Hello,

I would like to know is there a way (easy or not that easy) to change/add/remove fields to the Manual Payment form (that shows up when a client select Manual Payment) I would like to remove some fields since are not needed + adding some fields to fulfil my customer informations needs.
