How do you disable a product temporarily so that it doesn’t appear in the store?

There is no option to disable a product other than to delete it but there are a few workarounds:

The easiest option is to set the “Available Copy” field of the product to 0. This will show a “Sold Out” message.

Another option is to use the category display technique to achieve what you are after. This post will explain more:

For example, you can have a category called “Active” and then another category called “Inactive”. And then only show products from the “active” category (any product that goes to the inactive category won’t show up anymore).

Then can you at least on the manage products page show the category, so you can easily see what products are in what category including inactive?

The problem is that the manage products menu only has limited space so it can only display so much information. It mainly displays the snapshot of the important details of the product. I will look into adding the category info there.
