Hi, I have more than one product, one is digital download one is a service based offering. I need to have the emails that go out to my customers different. One needs to send the encrypted link and have instructions and the other is more like a thank you email. I only see the Email Settings under settings how do I change the message to buyer for every product?

The email can’t be configured on a per product basis. Shopping carts are meant to allow bulk item purchases. Per product email doesn’t work when a customer purchases 5 of your products (which email will the plugin send?). This is why one global generic email is used.
You can customize the email using email tags so it can cater for most situations.
For example: Use the following email tag in the email body settings:
{product_link_digital_items_only}
This will only include the encrypted links if the person purchased a digital item. For any other items, there will be no link.
