Currently, when I add a product it looks like this:

I would like the product to look like this:
Parasailing Tandem – Club Med Jan 1

No, that can’t be done (the variations need to be appended like the way it does).
Can you please explain a bit more? I have looked at eStore-extra-shortcodes/shortcode_include2.php In that file you have functions that wrap the variable in brackets. $product_name .= “(“.$var1.”)”; Can’t I just do this $product_name .=$var1; to at least remove the brackets? I understand that file will be overwritten when an upgrade does occur.

Yes, you can hack it like that but if you do that then it will cause trouble in the post payment processing stage when there is a digital variation option. One hack will lead to other failures and it will become an install that we can’t support. So we advise users not to perform risky hacks that can make the plugin unstable.
