Is there a way to send the member registration form details to the admin in registration complete email when a new member joins?
You can customize the registration complete email with email tags. Details here:

Whatever details you choose to add in that email will also get sent to the admin (given you are using that feature).

Is there a way to customize the email the admin receives after member registration? I’m not interested in the details, especially their chosen password, and only want to receive a short message that says: new member registration, so I know I have to go the dashboard to manually approve the membership.

No, because the admin is currently getting a CC (Carbon Copy) of the member’s registration email.

You don’t have to open the email message. Just change the email subject to something like “New Member Registration Completed” and then all you have to do is just glance at the subject line in your inbox.
