I believe the developer has fixed this and he will be releasing an updated version of the plugin.

PROBLEM
The apostrophe problem seems to be fixed in the emails that are configured in the “Settings > Email Settings” tab. However, there is still a problem in one of the other email configuration text areas.
The apostrophe character is still causing a backslash in the email that is sent out when you change the “Account State” of a user (from the user “Edit” window.)

HOW TO REPRODUCE
> Login to the WordPress Admin area (left sidebar)
> Select “eMember Members”
> Click on the “Email Settings” (tab)
> Click on “Edit” link for a User
> Change “Account State” from dropdown selector
> Check “Send a Notification to the User” (checkbox)
> Click “Save Member Info” (button)
