How can we have the full list of members (address, city, gender, etc.) and make that information visible only by the admin?

Currently you can find all of the information of a member by you editing a particular member’s record from the “Members” menu. Have you tried that?

Are you asking for this information to appear in the summary list table?

You can also control what info your members should fill out during the registration process. Check the following documentation:
