Custom field just for admin use only

I have a custom field for each member. But I want the value in the field to be entered by the admin person only. Members either cannot see the field or the field is grey out. Is that doable in eMember? If yes, how?

You can create read-only fields, that can be grayed or blacked out.

Can I see the registration form and member profile created by this addon?

Is there a way to achieve the same without using it?
