Might anyone please be able to help with this?
If I set up a coupon for £100, with maximum use of 1, and there are two items in the cart, then 2 x £100 will be applied. And so on! So if the customer has 10 items in their cart, they will get a 10 x £100 discount on their order from a single £100 coupon.
Am I mistaken in thinking that a coupon of value £100 with maximum use of 1 should only discount £100, no matter how many items are in the cart?
Is this a feature of the cart, and / or is there any way to fix it to behave differently?
How are you configuring the coupon?

Here is how the coupon is set up.
In the screenshot you provided, I am interpreting the coupon code to say 180£ discount applied to TOTAL cart value, and that only one person can ever use the coupon. Is that what you wanted?
Exactly!
But if I have two products in the cart, then £360 is deducted from the total.
And for instance, if I then add a third product after the coupon is applied, another £180 is added to the discount so that £540 is deducted.
Something is messed up on your site. Did you apply any customizations? I will need to check configuration. I will send you an email for it.
