Any Way to Make a Customer Input Field a Drop Down Instead of a Text Box?

We collect several pieces of customer information using your Customer Input add-on to the WP Simple PayPal Cart plugin. We would like to make one of the fields be a drop down so they are forced to choose one of the options instead of just typing something in. Is there any way to do that?
